Garlic Aioli
One of the most memorable pairings I have had are Brussels sprouts topped with garlic aioli. There were many great components in that side dish, but my favorite part was the garlic aioli. I love garlic, and aioli is basically mayonnaise, so you really can’t go wrong here.
The recipe is very simple and does not call for many ingredients. I recommend using a small food processor, though you can use a mortar and pestle to press the garlic until it is completely flat. To ensure great results, always use fresh garlic, the more the better. I have tried to use garlic powder when I did not have fresh garlic and it was not the same. You can always put any remainder aioli in a container and save it in the fridge.
When I make Brussels sprouts, I try to make this aioli as well. The aioli is great for anything you desire, such as burgers, sandwiches, fries, etc. I know some of you all do not like mayonnaise, but give it a shot and call it aioli, maybe then you will fall in love with it as well.
